Beet/Vegetable Soup (Vegan)

Tis the Season… I’ve never made Beet Soup before, but I have made a lot of Vegetable Soup

INGREDIENTS:

  • Vegetable Broth (2 Containers)
  • Water (Match the amount from Broth)
  • Frozen Peas
  • Broccoli (Fresh)
  • Onions (Maybe a 1/2 of a Large Onion)
  • Beet (Large Beet)
  • Garlic Powder
  • Olive Oil (Maybe 3 Tablespoons)
  • Bay Leaf
  • Mushrooms (Optional)
  • Carrots (Optional)

My girlfriend brought home a huge Beet… Basically I just cut it into 1″ cubes, and put it into a large pan full of Vegetable Broth (2 Boxes) and Water (I probably add as much water as there is Broth)

Added Onions, Frozen Peas, Olive Oil, a Bay Leaf, Fresh Broccoli, Garlic Powder, Maybe Mushrooms & Carrots
