Mashed Potatoes
INGREDIENTS
8 to 12 Potatoes, Depending On How Many You Are Serving, And How Big The Potatoes Are (Any Type Is Fine)
Vegan Butter
Almond Milk
Pepper (Ground Or Other Is Fine)
Yellow Curry
PREPARATION
Boil Water, And Add Cut Pieces Of Potatoes (Cut Potatoes Into 4 to 8 Pieces Each)
Strain Water Once Fork Can Go Through Potato
Add Half Cup Of Vegan Milk (Add More If You Like Them Less Thick)
Add Three Tablespoons Of Vegan Butter
Add A Teaspoon Of Pepper
Add One Teaspoon Of Yellow Curry
Mash Or Whip Potatoes
Peas
Frozen, any brand
Yams
INGREDIENTS
Between 1 to 4 Yams
Vegan Butter
Cinnamon (Optional)
Pecans (Optional)
Pancake Syrup (Optional)
PREPARATION
Preheat Oven For 350
Cut Yams Into One Inch Slices

Ok, so this was a Tofu Scramble, with leftover Potatoes from my Vegan Fall Bake from the day before, Avocado, Salsa and Vegan Sausages
With the Tofu, I lay out some Paper Towels, cut the Tofu into Slices (1/2 inch thick), and lay them on the Paper Towel
I then lay another Paper Towel on top
This helps to dry the Tofu which can be wet, I didn’t do this forever, but I do it now, and it’s much better
Put some Olive Oil in the skillet, crumble the Tofu into the pan, I like to add tomato and mushrooms, but you can use what you like
I hit it with Pepper, sometimes Garlic Powder, sometimes Curry
The Left Over Potatoes I just place in the pan to reheat them, the Vegan Sausages I cook on a different skillet

I recently began making Vegan Burgers out of ‘Beyond Beef’, instead of ‘Beyond Burgers’… They’re the same company, but the Beyond Beef comes in a package where they aren’t made into patties… Beyond Burgers are shaped like patties
I cut the Beyond Beef package into four pieces, then I grab one of the four pieces, and mix it with Bar B Q Sauce and Garlic Powder, like I did years ago with actual burger… For some reason, these taste better to me than the patties, though the patties are also good… I eat both for variety, but the hand made patties taste better to me for some reason
